Today started off rocky. Our plans were interrupted by a dud car rental and it took us 5 hours to finally get to Long Valley, New Jersey.
But, after all of that craziness, we relaxed and enjoyed a really lovely lunch and time with family, thanks to Ray’s mom.
Ray’s sister, Christine, grilled up some fantastic hot dogs and burgers (some of which you can see below) and then after all her hard work, she got to hold a live hot dog.
We were able to do a few errands while out in the “country”. We went to Costco and replenished our refrigerator and finally picked up our framed paintings–we bought art in South Korea and had it custom framed in New Jersey (it is much less expensive than framing in New York City). Some of that art will be up in our “after” shot, when we get to repainting our room.
My sweet mother-in-law went out of her way to get us delicious free range eggs from a local chicken farm. I love how they come in all different colors and sizes depending on the chicken that laid them. One chicken laid a monster egg–the poor girl, she must have been clucking hard! Mom, Dad and Christine tried them out and said they were very tasty, so I’m excited to try them out sometime this week and photograph them in all their glory!
For dessert, there were cupcakes, lots and lots of cupcakes. I’m not even a big cupcake person, but I wanted these so badly. There were about 20 different flavors, from peanut butter to chocolate and everything in between and they smelled unbelievable. I could smell them in the kitchen the minute I walked in from the framing store and from that minute, my stomach was growling for just a bite. But, I know myself well and I can’t just stop at a bite of sweetness. I can proudly say that although I was EXTREMELY tempted by delicious looking cupcakes, I did not even taste one and kept close to my daily 1300 calorie range. Instead of having my usual two snacks, I sort of saved up because I knew I wanted to eat with my family. So, I ate the burger on whole grain bread and I’m pretty sure I kept to my plan.
Breakfast: Egg, Turkey and Chedder on Whole Grain Bread.
Lunch: Cheeseburger with Low fat Cheese on 100 Calorie Whole Grain Bread with Tomatoes and Onions.
Dinner: Chicken, Pasta and Broccoli. Although, it’s on a pretty spring place mat, it didn’t feel like spring on this cold 45 degree day.
Happy Mother’s Day to all you wonderful mothers out there! Thank you for all your hard work and love. We love and appreciate you back and I just want to give a special hug and love to my mother and my mother-in-law, both who are absolutely wonderful. It is a blessing to have you both in my life!
