Saturdays are usually our catch up on sleep days. Today, Ray and I slept in till 2PM and it was phenomenal. I woke up a few times, read for a bit and then fell back asleep. It was just a perfect Saturday. So, when we woke up finally, we decided to make our delicious breakfast and get some organizing done and then start on the bedroom makeover.
Last weekend, I took a photo of some local farm eggs that Ray’s mom bought for us. Today, we finally tried them out. They are definitely a different color on the outside and on the inside. The yolk was much yellower than the store bought eggs. Ray mainly made the breakfast today (he called it “Ray’s magical eggs“) , while I snapped up some shots and made tea. He chopped up different colored peppers and added red crushed pepper, lemon pepper, kosher salt after sautéing them in a non-stick pan with real butter. We mixed that up and voilà, a delicious breakfast in a matter of minutes!
The pepper and eggs were so tasty. The other flavors overwhelmed the eggs (in a good way), so I’m not sure if I tasted much of a difference with the local free range eggs. I think what we need to do is a blind taste test with a hardboiled egg. Maybe I’ll do that later in the week…hmmm!

Since we had our breakfast/brunch so late in the day, I only had some other fruit snacks and a lunch/dinner later in the day. This happened to be chicken with some nuts, with cajun pepper, brocolli and cous cous (with garlic).
Since our day started out so late, we didn’t get a ton done on the room, but hopefully, it will be complete tomorrow, so I can have my apartment back in order. Right now, it looks like we’re having a flea market sale in our living room!
